If you’re in the mood for something deliciously scary for dinner, you’ve found the right recipe! This spooky quesadilla uses tortillas, cheese and your choice of filling to create a fun mummy face! This recipe comes to us from our friends at Raddish.
Cooking Tip of the Week: If you will be grating your own cheese rather than using the pre-shredded kind, 1/3 cup is equal to one ounce of cheese.
Food for Thought: Unlike ghosts and vampires, mummies are actually real! Don’t worry, though, they only existed a long time ago and you’ll never see a real one on Halloween. People in ancient Egypt used to bury their ancestors as mummies. They would preserve the ancestor’s body and wrap it in many layers of cloth, then seal it in a tomb with symbolic items like food and jewelry. On Halloween, we sometimes imagine that a mummy could come back to life, but that would never really happen!
Family Dinner Conversation Starter: Can you think of something you used to be afraid of? What helped you stop being afraid?
Ingredients:
For each quesadilla, you will need:
2 flour tortillas
1/3 cup shredded cheddar cheese or dairy-free cheese
2 tbsp. filling (see options below)
2 sliced black olives
Cooking spray
Filling options:
Black beans
Roasted red peppers, diced
Zucchini, grated
Salsa
Directions:
Adult: Preheat oven to 450F and line a baking sheet with parchment paper.
Kid: Place one tortilla on baking sheet. Top with cheddar cheese and your favorite filling.
Adult: Use a pizza cutter to slice the other tortilla into ½ inch wide strips.
Kid: Arrange the tortilla strips across the top of the cheesy tortilla, overlapping slightly.
Kid: Add two sliced olives for eyes.
Together: Spray top of quesadilla with cooking spray. Bake until cheese has melted, about 5 minutes.
