Herb and Cheese Omelet
Omelets are a quick dinner that still feels fancy. Since they cook quickly, you can make a few omelets in as little as 10 minutes! Try adding some sautéed veggies to your meal once you get the hang of a plain cheese omelet. This is a Kids Cook Monday original recipe.
Makes one omelet, increase quantities for additional omelets as needed
- 3 eggs
- 1-2 tbsp. chopped fresh herbs, such as basil or chives
- 2 tbsp. shredded cheese, such as cheddar or Swiss
- A small pinch of salt
- A few grinds of fresh black pepper
Cooking Tip of the Week: Omelets are a super quick meal, but they need your full attention for the few minutes that they are cooking so they cook thoroughly and don’t burn!
Food for Thought: There are so many types of herbs, they’re actually like a big family! Different varieties of the same herb, like sweet Genovese basil and spicy Thai basil, are kind of like brothers and sisters. They look similar, but definitely have their own special characteristics. Other herbs are related like cousins because they share the same herby “grandparents” but have pretty different character traits. Basil, thyme and oregano are all in the mint family while chives and garlic are in the onion family!
Family Dinner Conversation Starter: How big is your family? Some families are small and others are really big. There’s no wrong way to be a family!
Together: Chop the herbs.
Together: For each omelet you will make, crack three eggs into separate bowls.
Kid: Add a pinch of salt, a few grinds of fresh pepper and 1-2 tbsp. chopped fresh herbs to the egg bowls and whisk together.
Adult: Heat a six-inch non-stick skillet over low heat. Add 1 tsp. butter and tilt the pan to coat the bottom as it melts.
Adult: Pour the egg mixture into the pan. Working quickly, stir the mixture a bit with a rubber spatula. Gently push the cooked outer parts of the mixture towards the center.
Adult: As the eggs begin to firm up, stop moving the mixture around (so you don’t end up with scrambled eggs!) Right now, the bottom should be cooked and the top will still be a bit runny. Add 2 tbsp. shredded cheese.
Together: Allow the omelet to cook for 1-2 minutes more. Loosen the edges with a spatula and carefully slide the omelet off of the plate, folding it over as it lands on the plate.
Optional: Before making your omelets, sauté some veggies such as onions, peppers and mushrooms in a separate pan to add on top of your cheese filling before folding the omelet!
