Food for Thought: Kiwis, also called kiwifruit, are a unique fruit that are commonly grown in New Zealand and California. Did you know that a kiwi contains more vitamin C than an orange? They are also an excellent source of vitamin K and fiber. And although it’s fun to scoop the green flesh out of a kiwi with a spoon, the furry brown outside of a kiwi is actually edible too and contains additional nutrients and fiber!
Family Dinner Conversation Starter: If you could change your age, what age would you like to be? Why?
Ingredients:
- 2 lemons, juiced
- 1 teaspoon honey
- 2 tablespoons chopped fresh mint plus extra leaves for garnish
- 1 pound mango chunks
- 1 pound kiwis, peeled and sliced
- 1 pound strawberries, hulled and quartered
Directions:
Kid: In a small bowl, whisk together the lemon juice, honey, and chopped fresh mint.
Together: Set aside while preparing the fruit to allow the mint to infuse the mixture. You can make this up to one day ahead.
Together: Put the fruit pieces in the large bowl and gently toss with the lemon mixture.
Adult: Chill in the refrigerator until ready to serve. Best eaten within a few hours.
