This fuss-free recipe uses minimal ingredients, needs no special equipment, is delicious, easy on the eyes AND nourishes your body! What more do you need in a dessert? This creamy, fruity pudding serves two. This recipe comes to us from Davina Goh of Davina Da Vegan.
Ingredients:
- 160g (0.68 cups) pink pitaya
- 3 tbsp soy milk powder (or any other non-dairy milk powder)
- 1 tsp virgin coconut oil
- 1 tsp agave nectar
- 1 tbsp water
- 1 tbsp psyllium husk
- 2 tbsp Goji berries, soaked overnight
Directions:
1. In a small bowl, mash pitaya with soaked goji berries together into a pulp with a fork.
2. Add all other ingredients. Mix evenly with a spoon.
3. Pour into two dessert bowls, place in the refrigerator to chill for minimum 2 hours.
4. After that, you may garnish with optional cut fruits and/or edible flowers and serve.
