10 Sheet Pan Recipes for Easy Plant-Based Dinners

The sheet pan is a humble piece of cookware but that doesn’t mean it can’t be your best friend in the kitchen.

Sheet pan cooking is one of the simplest ways to build a meal from scratch. All you need is a few different vegetables, some beans and tofu, your favorite spices and seasonings, a drizzle of oil, and a hot oven. With this combination, you can create hundreds of different plant-based recipes that taste great and don’t require too much prep work, cook time, or clean up. You’re basically making the oven do all the work, roasting everything all at once and taking it out 20-30 minutes later.

And although it may seem too good to be true, this modest style of cooking produces some delicious results without having to rely on dairy or meat. When you put broccoli, Brussels sprouts, turnips, sweet potatoes, and other plant-based foods in the oven, good things start to happen: vegetables will take on a natural sweetness, tofu develops a nice chew, and any sauce or marinade melts into a yummy sticky coating.

Sheet Pan Ratatouille Gnocchi

Didn’t think you could make gnocchi in the oven? Well think again! This clever recipe from Contentedness Cooking is so simple to prepare and also a quick clean up. Just add the gnocchi, zucchini, onions, eggplant, tomatoes, and bell peppers onto a sheet pan, cover with olive oil and seasonings, and bake in the oven. Twenty minutes later, your Italian-style ratatouille gnocchi is ready to serve.
