Ingredients:
- 1 cup (170g) quinoa
- 1 1/2 cups (375ml) water
- 1 1/2 cups (225g) grape or cherry tomatoes, cut into quarters
- 1 1/2 cups (180g) diced cucumber
- 1 large yellow bell pepper, diced
- 1/4 red cabbage, chopped
- 3 celery stalks, chopped
- 3-4 green onions, sliced
Maple Syrup Dressing:
- 1/4 cup (60ml) apple cider vinegar
- 1/3 cup (80ml) olive oil
- 2 Tbsp. pure maple syrup
- 1 Tbsp. Dijon mustard
- Sea salt and freshly ground black pepper, to your taste
Directions:
1. Place all dressing ingredients in a jar. Shake until well combined. Refrigerate until ready to use.
2. Rinse the quinoa under cool, running water, then drain. Place it in a pot, add water, sea salt and bring to a boil.
3. Lower the heat and simmer, covered, for 15 minutes. Then take it off of the heat and let it chill for 5 minutes (still covered).
4. Once the quinoa is cooked, fluff it gently with a fork and let it chill until you chop all the veggies.
5. To assemble the salad, add all the ingredients to a large bowl. Pour the dressing over and toss to combine. Enjoy!
